Peanut Butter Buckeyes

The peanut butter + chocolate combination just does not get old for us over here. These delicious Peanut Butter Buckeyes are a fun and festive way to enjoy one of our favorite flavor combinations. Check out the easy, not-to-miss recipe below and let us know if you decide to make it. 
 
Ingredients:
  • 1/2 cup Joolies Medjool Date Syrup
  • 1 cup Georgia Grinders Creamy Peanut Butter
  • 2/3 cup coconut flour 
  • 1tsp vanilla extract
  • 1/2 cup dark chocolate chips
  • 1 tbsp coconut oil 
  • Sprinkles
Instructions:
  1. In a medium bowl, mix together the peanut butter, date syrup, coconut flour, and vanilla extract until a sticky, but moldable dough forms.
  2. Pop the peanut butter mixture into the fridge to chill for 20-25 minutes.
  3. While the peanut butter mixture chills, heat the chocolate chips and coconut oil in a small saucepan until melted.
  4. Grab a cooking sheet and line with parchment paper.
  5. Remove the mixture from the fridge and roll into even 1 inch balls. Dip each ball halfway in the chocolate mixture and place on lined cookie sheet. Add sprinkles the top then allow the buckeyes to harden before serving. 

Store in an air tight container in fridge to keep chocolate hardened.
