We love using our nut butter to make a true crowd pleaser: Chocolate Chunk Cookies! These tasty cookies happen to be grain free and filled with all of the yummy dairy free chocolate chunks from Enjoy Life Foods. This delicious recipe was created by our friend Lyndsey Piccolino from @mommafitlyndsey. We hope you enjoy it!
Ingredients:
2 eggs
1 1/4 cup almond flour
1/4 cup tapioca flour
1/3 cup Georgia Grinders Almond Butter
1/3 cup ghee (used Fourth and Heart Vanilla Bean flavored)
1/4 cup maple syrup
1/2 cup coconut sugar
1 tsp vanilla extract
1 cup chocolate chunks
Flaky sea salt
Instructions:
Whisk eggs in a bowl then add in remaining wet ingredients. Mix dry ingredients and then slowly add to wet ingredients until incorporated. Roughly chop chocolate chunks and mix 3/4 cup into cookie dough. Drop by tablespoon onto a cookie sheet about 2 inches apart. Bake at 350F for 9-10 minutes then top with remaining chocolate chunks and sea salt.
